Skin-Healthy Snacks

An abundance of healthy and delicious fresh fruits and vegetables this time of year make it easy to eat foods that are truly good for you and for your skin!

Try some of these fun and creative recipes (below) next time you want a snack, an appetizer, or need a mini-meal on the go!   

Portable Caprese Salad:

Alternate grape tomatoes and mozzarella pearls on a toothpick or wooden skewer.If desired, drizzle with Balsamic vinegar or sprinkle on dried basil (or for extra flavor, roll up a fresh basil leaf and add it to the skewer)

Summer Skewers:

# 1 Alternate chunks of cucumber and pineapple on a toothpick or wooden skewer, then drizzle with fresh lime juice.

# 2 Alternate chunks of watermelon and feta cheese on a toothpick or wooden skewer (you may add a fresh mint leaf at end for a refreshing finish).

Portable Fruit plate:

Alternate grapes and chunks of cheese on a toothpick or wooden skewer.

Turkey Roll-ups:Lay a thin slice of smoked turkey flat, spread it with a teaspoon of light cream cheese or hummus, then roll it tightly.For more taste and nutrients, add a slice of avocado, a strip of cucumber or tomato, or sprinkle on a few sprouts or shredded carrots.Get creative by adding a little dill, parsley, basil, or whatever herb you enjoy.

Greek Salad on a stick: Alternate olives, cucumber chunks and grape tomatoes on a toothpick or wooden skewer.You may also add marinated mushrooms for a little extra zest!

Tuna-avocado rounds: Mix flaked white tuna or albacore with avocado until it makes a thick paste.Spread between two whole grain crackers for a yummy, healthy mini-sandwich.Spice it up a bit by adding diced red onion or celery to the mix.

Stuffed Celery: Fill celery sticks with flavored hummus (my favorites are King Harvest Lemon or Balsamic Hummus), nut butters or cottage cheese for a healthy midday snack or lunch.
